Coconut Peanut Butter Cups

Chocolate: 
1 C of semi sweet chocolate
2 Tbs Coconut oil 
1 Tsp of vanilla extract 

Peanut Butter Filling

1.5 C of Peanut Butter
2 Tbs of honey

In a saucepan, melt the chocolate, coconut oil, and vanilla extract until smooth. Do the same for the peanut butter filling. Spoon 1 teaspoon of the melted chocolate into each of the muffin cups. Place it in the freezer for about 5 minutes, until it hardens. Next, Top it with the peanut butter mixture (to taste). Then top with another teaspoon of the melted chocolate. I garnished it with toasted coconut chips! Refrigerate until set.
