Recipe: Monkey Bread

With Fall just around the corner, warm desserts and beginning to seem appealing again!!

Ingredients

1 1/4 cups whole milk
2 teaspoons instant yeast
4 cups all-purpose flour
6 Tablespoons sugar
1 teaspoon salt
1 egg
6 Tablespoons unsalted butter, melted

Coating/ inside the dough

1 1/2 cups  dark brown sugar
3 teaspoons cinnamon
1 stick unsalted butter melted
1 or two bananas( to taste)

In a sauce pan, warm your milk, then remove it from the heat, and the add yeast. Whisk to dissolve.
Using a stand mixer mixer, with the paddle attachment, beat the flour, sugar and salt until combined.
In a separate bowl, beat the egg and add it to the dry ingredients. Mix until combined.

Add in the milk until combined. Add the melted butter and mix until combined using a dough hook. (If the dough is too wet, add some flour)

Spray a bowl with cooking spray. Cover the bowl with plastic wrap and let it rest in a warm area until the dough has doubled in size(1- 2 hours).

Remove the dough from the bowl and shape it into a circle. Cut dough into small pieces, about the size of a gulf ball. Roll half of  the pieces into balls and roll out the other half into a small thick circle. With the half that is slightly rolled out, place 1-2 sliced bananas and 1/2 tsp of brown sugar into the center of each. Pinch all of the edges together, to close each ball individually.

 Cinnamon Sugar Coating

In a bowl, mix together the sugar and cinnamon. Pour the melted butter into a separate bowl.

Assemble

Dip each ball into the bowl of melted butter and roll the balls in the sugar/cinnamon mixture. Place all of the dough balls in a sprayed pan(bundt). Arrange them by stacking one on top of another, in a circular direction.

Cover the pan with plastic wrap and set it in a warm area for 1-2 hours.

With the oven at 350 degrees F, remove the plastic wrap and bake the monkey bread until the top layer is brown brown. This could take between30- 40 minutes.

Let the bread cool for 20 minutes. Turn the pan oven onto a plate and sever while it is still warm!

Recommendation: Drizzle warm vanilla icing on top!!

enjoy
