Brownies with whipped topping




Brownie
3 large eggs, room temperature
1/2 cup granulated sugar
3/4 cup light brown sugar
2 sticks unsalted butter, melted
2 teaspoon vanilla extract
1/2 cup all purpose flour
1 1/4 cups cocoa powder
1 1/2 tablespoon espresso powder
1/2 teaspoon salt
Preheat oven to 300F. Grease mini cupcake tins.
To prepare the brownies,  beat eggs until fluffy and pale color. Add sugars and mix until combined.
Add melted butter and vanilla extract, mix until combined.
Combine flour, cocoa powder, espresso powder and salt. Combine the flour mixture in the batter with a spatula.
Pour the mixture into the prepared tin.
Bake for 35 to 40 minutes. 
whipped topping
1/2 cup of cold heavy whipping cream 
1 Tbs of sugar 
Place the sugar and the heavy whipping cream into a stand mixer with a whisk attachment. Whisk until cream reaches a stiff peak.
