Cinnamon Vanilla Granola

3 cups oats
1 cup toasted pecans
1 cup whole raw and slivered almonds

3 1/2 tablespoons cinnamon
1/2 tsp. salt
3/4 cup maple syrup
3 tablespoons canola oil
1 1/2 tablespoon vanilla extract
1 cup chopped dried fruit( I like cherries) 


Preheat the oven to 350 F. 


In a bowl, combine the vanilla, maple syrup, and oil. 


In another bowl, combine the oats, cinnamon, salt, and nuts.  Once combined, add the wet ingredients into the bowl and stir. 


Pour the granola on a baking sheet and place in the oven for 30-40 minutes. 


Once out of the oven and cooled, add the dried fruit.
